Thanksgiving Dinner Recipes
Making thanksgiving dinner for your family is a real pleasure, and it is a joyful thing to sit and eat with people you love.
Deciding on a menu can be tricky, but sticking to the classics is definitely a good idea. A bit of turkey, cranberry sauce,
mashed potato, vegetables and gravy are the traditional way to enjoy this festive holiday.

The Perfect Thanksgiving Turkey
Cook for 45minutes per kg, so thats usually about 3.5 hours. And you'll need to leave it to rest for about 1/2 an hour too.
1. Preheat the oven to 190c.
2. Finally grate the zest from 1 lemon and 1 lime, and stir in 100g of softened butter. Add 15g chopped thyme and 20g
chopped parsley, season with black pepper, and mix well until combined. Then cut the lemon and lime into lengthways
quarters.
3. Remove the turkey giblets and rinse the turkey with cold water. Pat dry. Lift the skin from the neck of the turkey and
push the flavoured butter evenly under the skin.
4. Stuff the inside of the bird with some ready prepared stuffing (see below). Then put the lemon and lime quarters
inside the turkey along with 2 or 3 bay leaves.
5. Place the turkey in a large roasting tin, and brush with 50g melted butter. Place a square of foil over the turkey to
prevent it from browning too much.
6. Baste the turkey with juices every hour.
7. At the end of cooking time, check to see if it is cooked by inserting a skewer into the turkey; the juices should run clear
not pink. Wait and test again after another 15 minutes if the juices are slightly pink.
8. Leave to rest for about 30minutes covered in buttered foil. Then it will be perfectly ready for slicing.
For a little extra treat, cover the turkey with bacon towards the end of its cooking time, and cook with the foil removed
until brown.
Sausage, Apple and Cranberry Stuffing
This is a delicious and nutritious stuffing to enjoy with your turkey.
1. Preheat oven to 175c.
2. Cube 100g wholewheat bread and 100g white bread. Put on a baking tray and toast lightly in the oven for about 5
minutes. Transfer to a large bowl.
3. In a large frying pan (skillet) cook 455g turkey sausage and 150g diced onions until browned.
4. Add 100g chopped celery, 1/2 tsp sage, 1/2 tsp rosemary, 1/4 tsp rosemary. Stir and cook for 2 minutes. Pour this
mixture over the bread in the large bowl.
5. Mix in 1 cored, and chopped apple, 100g dried unsweetened cranberries and 20g chopped fresh parsley.
6. Add just over 50g melted butter and 180ml turkey stock (you can make your own from the giblets that you removed
from the bird earlier). Mix together.
7. Stuff inside the turkey.
Gravy
This is a recipe thats been in my family for years. Its so delicious and easy to make. There's a lot of guesswork involved
in the quantities, but go with what you have and keep tasting until it seems right.
1. Use juices from the meat and mix with vegetable waters in a small saucepan.
2. Add some milk or cream towards the end of cooking.
3. Thicken with flour and Bisto (gravy granules - to give colour) made into a smooth paste.
Cranberry Sauce
Serves 8
1. Place 500g fresh cranberries in a small pan with 300ml cold water, and gently bring to the boil. Reduce the heat, and
simmer gently until the cranberries burst.
2. Add 3-4 strips orange zest, 50g muscovado sugar and 100g fructose sugar and stir. Simmer until the sauce
thickens, then remove the zest and transfer to a little bowl to serve.
