Healthy breakfast recipes are quick and easy to make, or at least the healthiest ones are. This is
because the more you cook things the more likely they are to lose their nutrients and natural
goodness. To give your body the best benefits, go for the most uncooked healthy breakfast recipes.
You will notice a distinct difference in your daily energy levels and feel much more healthy if you are
awake just after you finish having 8 hours of sleep. Breakfast is the most important meal of the day,
but the first rule is to make sure you are awake in time for breakfast, to start the whole process of the
day in balance. It is said that to eat well one should eat every 4-5 hours, this means waking up in time
to eat 4 hours before you would eat lunch.Following waking up at a sensible time, it is very important
to have the perfect breakfast. Here are a few unique healthy breakfast recipe ideas:

Morning Smoothie and Toast
Mix all fruit you have together with a couple of tbsps of yoghurt, it is very quick and easy to make. Toast
a piece of wholemeal or brown bread and then cover with a little olive oil spread and fruit puree. This
is the ultimate low-carb breakfast snack.

Yoghurt, Muesli and Fresh Fruit
Layer in a glass cup muesli, yoghurt, chopped banana, chopped walnuts, raisins, oats and wheat
flakes. Top it with fresh fruit (apple or orange). Enjoy with a little honey or jam, and a long teaspoon.
This is packed full of really healthy breakfast foods that are essential to keep the body going through
the day. This means that it is really good for children to enjoy, it is also very fun to create these little
dishes in order to suit your tastes.

Porridge and Honey
Mix 50g oats and 150ml milk in a microwaveable bowl, and microwave on high for a few minutes until
thick. Top with a tsp of honey and a few raisins or chopped dried apricots.

Homemade Muesli
Muesli is an easy, quick breakfast recipe that everyone can enjoy. Muesli is adaptable to your taste if
you make it yourself and store it in airtight container. Just simply exchange the nuts and dried fruits for
the kinds you enjoy.

1. Preheat the oven to 190°C, gas mark 5. Spread 350g jumbo oats in a large roasting tin and bake in
the oven for 15-20 minutes, or until golden brown. Tip into a large bowl and leave to cool completely.
2. Mix together 50g sunflower seeds, 50g pumpkin seeds, 200g mixed nuts (roughly chopped), 200g
semi-dried figs (quartered), 75g fried cranberries, 100g dried apple (roughly chopped) and then toss
with the oats. To serve, soak a portion of muesli in a little yogurt or milk, overnight in the fridge, ready
for breakfast the following morning. Soaking the muesli softens the oats and will give it a lovely
creamy texture.

Apricot and Cherry Buns
A really great way to start the day, nutritious, tasty and easy to make. These buns have fruit, fibre and
little sugar in them. Why not try making them with a sugar substitute also?
Makes 6

1. Preheat the oven to 200°C, gas mark 6.
2. Mix together 20g butter (melted), 40g caster sugar, 200ml milk, 1 egg (beaten) and 1/2 tsp vanilla
essence in a large bowl. Place 100g plain flour, 1 tsp baking powder and a pinch of salt in a sieve
and sift over the butter mixture. Stir in 125g wholemeal plain flour and 25g porridge oats.
3. Add 75g dried apricots (roughly chopped) and 50g glacé cherries (roughly chopped) and lightly mix
to combine the ingredients. The mixture will look slightly uneven.
4. Place 6 large muffin cases into a muffin pan and spoon the mixture evenly between them. Place on
a high shelf in the preheated oven and bake for 25-30 minutes, or until they are well risen and brown.
Remove from the oven and serve warm.


Scotch or American Pancakes
Undoubtedly one of america's favorite foods, pancakes are a really fun way to start the day. But by no
means should you cook these every day. Save these for a special occasion or maybe have them
every month. They really are a very positive way to start the day.
Serves 4

1. Gently melt 25g butter and leave to cool slightly. Place all the dry ingredients in a bowl, that is 50g
plain flour, 50g wholemeal flour, 15g baking powder and 25g caster sugar. Add 2 eggs, 2 tbsp honey
and 125ml milk and whisk until smooth. Gradually whisk in the melted butter.
2. Heat a heavy-based non-stick frying pan or griddle pan until hot. Reduce the heat to medium and
add a small knob of butter. Spoon in a tablespoonful of mixture to make an 8-10cm round. Cook for 1
minute or until air bubbles start to form on the surface. Turn the pancake over and cook the other side
for 30 seconds or until just golden. Set aside and keep warm. Continue with the remaining mixture to
make 12 pancakes.
3. Finish with a drizzle of honey and your favourite fruit (or a fruit salad).
