Breakfast Muffin

The perfect thing to have with your morning mug of tea, cup
of coffee or glass of fresh fruit smoothie. A breakfast muffin
can have all you need to get your day going well and healthily,
and it's perfect if you need something quick.
♥ The Ultimate Breakfast
Muffin Makes 12 You can change some of
the ingredients, depending on what you prefer and what you have
in your store cupboard. You could change the type of nuts or
dried fruit to walnuts and dates for instance.

Ingredients:
150g wholemeal self-raising flour
150g gluten free self-raising flour
50g rolled porridge oats
1 tsp baking powder
1/2 tsp mixed spice
1 tsp cinnamon
100g sultanas
100g dried (unsulphured) apricots, diced
50g pecans, diced
50g caster sugar
1tbsp flaxseed
100ml sunflower oil
150ml natural yogurt
150ml milk
a drizzle of honey or agave nectar
1 medium egg, beaten
2 bananas, mashed
1 tsp vanilla extract
2 small apples, grated (coarse)
1 medium carrot, grated (coarse)
1. Preheat the oven to 180c, gas mark 5. Place 12 muffin
cases in your muffin tray(s).
2. Combine the dry ingredients together in a bowl (the first
11).
3. Combine the wet ingredients together in another bowl, mix
well.
4. Mix together the wet and the dry ingredients, and then spoon
into the muffin cases.
5. Sprinkle with sunflower seeds, pumpkin seeds or oats and
bake for 20 minutes.
6. Cool on a rack. Eat whilst still warm.
♥ Banana, Honey and Walnut Muffins
Makes 12 These are a delicious way to start the
day, and ought to be freshly made and eaten straight away.
Ingredients:
200g wholemeal flour
150g gluten free flour
2tsp baking powder
1tsp bicarbonate of soda
pinch of salt
50g caster sugar
200g chopped walnuts
100g muesli
3medium eggs, beaten
120ml sunflower oil
1tsp milk
100g honey
3 large mashed bananas
1. Preheat the oven to 180c, gas mark 5. Line a muffin tin
with paper cases.
2. Combine together the flours, baking powder, bicarbonate of
soda and salt, then stir in the sugar, walnuts and the
muesli.
3. In a separate bowl, mix the eggs, oil, milk, honey and
bananas. Then combine the wet and the dry ingredients.
4. Spoon the mixture into the cases, bake for 25 minutes, or
until golden brown.
